MAHASHIV RATHIRI SPECIAL : CARROT ALMOND KHEER

Carrot Almond Kheer.

Our ShivRathiri this year, turned out to be a simple stay at home one , yet The Almighty Brings in lots of favors for us. We have been lately hearing so many good news across, some of which which I will be sharing with you all.
I had to offer the Lord an evening prasadam. Mu husband and I lately prefer to have something that's both healthy to us and at the same time is a good offering to the Lord.
In that list, he loves Carrot kheer a lot!
I wanted to serve both the Lord and my family with a little variation of this Carrot Kheer and so emerged this CARROT ALMOND KHEER.

Things Needed:
  • Carrot : 2
  • Milk : 1 cup
  • Evaporated Milk : ½ cup (optional, can be substituted with more sugar if needed)
  • Sugar : ¼ cup
  • Cashew : 10
  • Almond : 10 ( soaked in Luke warm water for an hour)
  • Saffron : pinch (optional)
  • Cardamon Powder : pinch
  • Raisins : Few
  • Ghee: Little
Method:
  1. Pressure cook carrot till just a whistle or two with very little water
  2. Don't throw the water away. We can use it in the preparation for making kheer.
  3. Peel the skin off the Almonds and grind to a fine paste.
  4. Add the cooked and cooled carrots and grind to a thick smooth paste.
  5. Fry the cashews n raisins in ghee. Keep aside.
  6. Add the ground paste to the same vessel and give a quick stir for a sec. Add the water from the cooked carrot and bring it to a light boil.
  7. Add sugar,evaporated milk. Preboil 1 cup milk before hand in microwave to avoid being burnt at the bottom when directly boiled.
  8. When the kheer comes to a boil , add the milk and mix well. bring it to the desired consistency. Simmer once and turn off.
  9. Add cardamon powder,saffron, fried nuts at the end.

Prasadam Ready for the Lord.
