SOFT IDLY / KHUSHBOO IDLY

Madurai Idli / Khushboo Idli











Ingredients:
  • Idly rice  2 cups
  • Methi seeds 1/2 Tsp
  • Urad dha  1 & ½ cup
  • Sago/Sabudana  1/2 cup
  • Salt to taste
  • Cooking soda  ¼ tsp (optional)
Method

  1. Soak rice,methi & dhal together & sago separately for 4 hrs.
  2. Grind everything together with salt to a smooth batter.
  3. Leave it to ferment overnight.
  4. Before making idly mix cooking soda to the batter.
  5. Rest for 5 minutes.
  6. Make idlys as usual.
